SunButter Cake Icing (Top 8 Free, Gluten Free, and Vegan)


Hi everyone!  I need to squeeze in one more short post for 2016, and I wanted it to be simple (’cause I love simple), and versatile.  SunButter Cake Icing is a tasty way to add a twist on a favorite cake recipe.

This SunButter Icing is easy, but what I like best about it is that it is dairy free, egg free, peanut free, tree nut free, soy free, and wheat free!  Really it’s top 8 free, gluten free, and vegan!  It pairs beautifully with my Chocolate Cake , but would also be good on my Fudgey Zucchini Cake.  It an also be used on….

SunButter Cake Icing (Top 8 Free, Gluten Free, and Vegan)

  • 3 cups powdered sugar
  • ⅓ cup SunButter
  • 1½ teaspoons vanilla
  • ¼ cup milk (dairy free, I used rice milk)
  1. Mix powdered sugar, SunButter, and vanilla with an electric mixer.
  2. Gradually add milk until desired consistency is achieved (thicker for icing, thiner for a glaze)
  3. If icing becomes to thin, mix in a small amount of powdered sugar to thicken.
  4. Frosts 9x13 cake, or fills and frosts 8 or 9-inch two-layer cake.

SunButter Marshmallow Truffles


It’s the most wonderful time of the year!  Christmastime is so fun and full of lots of my favorite things.  With the kids I’ve been doing crafts, Christmas stories, and of course baking and eating lots of yummy holiday treats.  It was time for a new recipe on the blog, and what better a recipe than one that can be made pretty quickly and looks great going to a Christmas party.

This recipe is dairy free, egg free, peanut free, tree nut free, and gluten free!  This recipe uses one of my all time allergy-friendly products, SunButter.  Seriously, how can one have fun desserts without SunButter?!  If you prefer a different nut or seed butter to suit your dietary needs, then it can easily be done.  You can also use your chocolate chips, and I used Enjoy Life because it’s the only kind I buy.

SunButter Marshmallow Truffles~Top 8 Free & Gluten Free~Mom Vs. Food Allergy

I melted my chocolate using a homemade double boiler.  See this tutorial for the how-to on melting chocolate in your own homemade double boiler.  All you’ll need is a glass or metal bowl and a medium size saucepan.

SunButter Marshmallow Truffles

Serves: about 3 dozen
  • 2 cups SunButter
  • 1⅓ cups powdered sugar
  • ½ tsp salt
  • 1 cup mini marshmallows
  • 1½ cups allergy-friendly chocolate chips
  • 1 tablespoon canola oil (or other safe oil)
  • sprinkles, sea salt, or more chocolate chips for toppings
  1. Line two cookie sheets with parchment paper.
  2. In a stand mixer or mixing bowl (using a hand mixer), mix together the SunButter, powdered sugar, and salt.
  3. Using the lowest setting on your mixer, blend in the marshmallows until just incorporated.
  4. Using your hands or a small cookie scooper, mold SunButter mixture into bite size balls, approximately 1-1½ inches.  Set aside. 
  5. Add oil and chocolate to your homemade double boiler. Melt your chocolate until very smooth.
  6. One by one, dip the SunButter balls into the melted chocolate, making sure to coat evenly while letting excess chocolate drip off into bowl.
  7. Place the chocolate coated ball onto the parchment paper and add toppings, if desired.
  8. Once you have coated them all in chocolate, put them into the refrigerator (uncovered) for about 25 minutes to set the chocolate.
  9. Store in refrigerator.
  10. Take out of refrigerator about an hour before serving to bring them to room temperature.

The kids can easily help make these SunButter Marshmallow Truffles.  Most kids will have fun rolling the “dough” into balls.  Have fun with this recipe and make the toppings festive!
